Mediterranean Stuffed Peppers

A friend and co-worker found this recipe in a catalog.  I do not know which one.  She made me a copy and it has been a family favorite ever since!

3 red, yellow, or orange bell peppers

1 1/2 t olive oil

2 – 4 T balsamic vinegar

2 gloved garlic minced finely

Salt & Pepper to taste

3/4 Lb. cherry tomatoes, stemmed and halved (I prefer Roma tomatoes as they have less moisture)

1 C mozzarella cheese, shredded or cubed

1/2 C loosely packed fresh basil leaves, cut into thin strips

Cut peppers in half lengthwise.  Remove seeds and ribs.  Place in baking dish.  Heat oven to 375ºF.  In bowl mix remaining ingredients well.  Fill each pepper with  mixture.  Bake for 25-40 minutes depending on how “al dente” you like your peppers.  I like mine very “al dente”.  Makes 6

    Fill them with the olive oil, vinegar and garlic?

      WOW! I totally blew this entire recipe!!!! It should have had tomatoes, basil, and mozzarella cheese which you mix with the balsamic, garlic, salt, and pepper. SOOOOO sorry! I will correct it and re-post.

      I must have accidentally posted prior to finishing… It would be a really boring recipe without ALL of the ingredients.
