Gorgonzola Meatballs

Ready to eat!

I saw a recipe for something similar.  I wanted to zip it up a bit as we like spicy foods so I combined my Meat Loaf, Porcupine Meatballs, and the original to make this one.

1 lb. hamburger

14 Ritz crackers – crushed

1 medium onion – pureed

1 T garlic powder

1 t celery salt

2 t black pepper

2 large eggs

18 Gorgonzola cheese  cubes

Tomato Gravy (below)

Preheat oven to 400º

Mix first 7 ingredients together.  Mixing very well.  Shape into approximately 18 balls.  Place in baking dish.  Carefully make a hollow in the center of each meatball.  Place Gorgonzola cubes into the center of hollow.

Carefully pour approximately 1/2 C of Tomato Gravy into the baking dish.  Using care not to pour on meatballs.  Bake for 20 minutes.

Baked Gorgonzola Meatballs

While meatballs are baking, pour remaining Tomato Gravy in small saucepan.  Bring to a simmer on medium heat.  Reduce heat and simmer on low to reduce and thicken.

Serve meatballs with mashed potatoes and pour Tomato Gravy over both.

Tomato Gravy

1 can tomato soup

1 can of water

2 T Worcestershire sauce

Mix all ingredients together well.
