Chocolate No-Bakes

4 cups sugar

4 – 5 T cocoa

1 cup milk

1 t vanilla

1 cup creamy peanut butter

1/2 cup butter

3 cups “quick” oats

Butter for 3 baking sheets

Butter 3 baking sheets.  Combine sugar, cocoa and milk in large saucepan.  Bring to a boil on medium heat and add butter.  When mixture reaches “Soft Ball” stage (235°), remove from heat.  Quickly add vanilla, peanut butter, and oats.  Stir well.  Spoon onto butter baking sheets.

Note: If your mixture is runny (you didn’t cook it long enough) a quick fix is to add more oats.  Be careful, if you have cooked it too long, it will harden in your saucepan and you will have to chip it out!
