As I posted, this is SO seriously easy!
2 C dried beans (I used pinto)
4 C water
1 lb. ground beef, chicken, turkey, or pork (you can even use frozen!)
4 oz. can diced green chilies
12 oz. can diced tomatoes
* Optional 2-4 T Cornmeal
Place dried beans in bottom of crock-pot. Place meat on top of beans. Pour chilies, tomatoes, and Vaquero’s on top and around meat. Add water. Set crock-pot on low for 8 hours. If your chili isn’t thick enough, add 2-4 T of cornmeal to thicken.
Serve with your choice of toppings.
