Pastry for two crust pie (below)
1 lb. bacon cooked very crispy and crumbled
2 C Swiss cheese shredded
1 4 oz. can diced green chilies
4 C milk
1 t black pepper
1/2 t Cayenne red pepper
Preheat oven to 425º. Prepare pastry crust. Sprinkle bacon, green chilies, and cheese onto the pastry lined pie pan. Beat eggs slightly. Add remaining ingredients to eggs and beat well. Pour egg mixture into pie pan. Cook uncovered for 15 minutes.
Reduce oven to 300º. Continue to bake for approximately 30 minutes or until a knife inserted in the center comes away clean. Let stand to set 10 minutes prior to cutting. Enjoy!
*If you wish to omit the crust spray the pie plate lightly with a non-stick spray prior to adding bacon, green chilies, and Swiss cheese.
2 C flour
2/3 C vegetable shortening
4 -5 T cold water
Cut shortening into the flour until particles are the size of small peas. Gradually, add water 1 T at a time, tossing with a fork until all flour is moistened and pastry cleans side of bowl.
Divide dough in half. Roll out onto lightly floured surface until size to fit your pie pan. Trim overhanging edge of dough 1 inch from edge of pan. Fold under and shape to your desired shape. Repeat with other half of dough.
